All Time Favorite Food - Pizza

My favorite food of all time is pizza. I can and will eat it for breakfast, lunch and dinner. To switch it up a bit, I thought I'd try to make a completely homemade pizza. I used a dough recipe from my Food Network Magazine "50 Pizzas" booklet and a sauce I found on the website Big Oven. I actually used a hodge-podge sauce recipes that I looked at.
I made the sauce ahead of time, it can be stored in the refrigerator or in the freezer.
Recipe:
In a saucepan, saute in olive oil 2 cloves minced/chopped garlic and 1 small minced/chopped onion
Add:
1 can (14.5oz) diced tomatoes, do not drain
1 can (6oz) tomato paste
1 Tbs sugar
A few tablespoons of water, to whatever consistency you like, I filled the 6 oz can and used that
The recipe called for various amounts of oregano, basil and italian seasoning...I added a little bit of each, to taste
Simmer for about 15 minutes
*Optional: I put my sauce in the food processor to thin it out because I didn't want chunky sauce
*If you don't add the sugar, this could also be used as a pasta sauce!



Dough:
Whisk 3 3/4 C. flour and 1.5 tsp salt
Make a well and add 1 1/3 cups warm water, 1 tbs sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil.
Mix all ingredients
Knead until smooth, about 5 minutes
Brush with olive oil, cover in a bowl and let rise until doubled, about 1.5 hours. (I also placed my bowl in the sink with some warm water)
Divide into two balls for 2 medium-large pizzas, or smaller for individual pizzas.


Top with the sauce and desired toppings!
I made one of the pizzas stuffed crust (Ryan's favorite) by rolling the dough slightly larger than the pan, and lining the outer edge with mozzarella string cheese and folding the excess dough over the cheese

Bake 10-15 minutes in 500 degree oven
I baked one of the pizzas and put the other in the freezer


And who doesn't love a cupcake for dessert?!
